Potato Latkes (from scrach)

Latkes are fried Pancakes made thin and crisp great as a side dish, serve with apple sauce, plain or with sour cream. some familys like to eat the latkes with salt, or...syrup and fruits. (OPTIONAL)!

Ingredients

2 eggs
a pinch Tsp.salt and pepper
1/4 cupvegt oil
4-6 LargePotatoes (corsley grated).
1 cupMatza-Meal

Instructions

Wash potatoes, corsley grate into thin ribbons, add salt, pepper, eggs and a cup of matza- Meal Mix lightly with hands. Allow batter to thicken for 5 min. --Frying-- --In a skillet put about 1/8 inch of Vegt. oil and heat. Mix batter, take a full Tblsp. Drop into hot oil, fry until golden brown on both sides. Enjoy with Applesauce, sour cream or your choice of dressing. BETEAVON....ENJOY....BON_APETITE!
