Potato Latkes (from scrach)
Latkes are fried Pancakes made thin and crisp
great as a side dish, serve with apple sauce, plain or with sour cream.
some familys like to eat the latkes with salt,
or...syrup and fruits. (OPTIONAL)!
Ingredients
| 2 | eggs |
| a pinch Tsp. | salt and pepper |
| 1/4 cup | vegt oil |
| 4-6 Large | Potatoes (corsley grated). |
| 1 cup | Matza-Meal |
Instructions
Wash potatoes, corsley grate into thin ribbons,
add salt, pepper, eggs and a cup of matza- Meal
Mix lightly with hands.
Allow batter to thicken for 5 min.
--Frying--
--In a skillet put about 1/8 inch of Vegt. oil and heat.
Mix batter, take a full Tblsp.
Drop into hot oil, fry until golden brown on both sides.
Enjoy with Applesauce, sour cream or your choice of dressing.
