BAKED HERB-CRUSTED CHICKEN BREASTS

Tenderized, pounded Chicken brests, Marinated in Lemon juice.

Ingredients

1 1/2 tblsp.rosemary
3 tblsp.parsley
6 tblspchoppedbasil
1 1/2 cupsplai dry breadcrumbs
6 tblsp.fresh lemon juice
2 skinless and bonelesschicken
2 tblsp.olive oil
1 1/2 tsp.salt
1/2 tsp.ground black pepper
3-4 wedgeslemon wedges

Instructions

Using meat mallet, pound chicken breasts to ½ to ¾ inch thickness.

Arrange chicken in a glass baking dish.

Pour lemon juice over chicken, cover and refrigerate for 1 hour.

Preheat oven to 450 degrees.

Pat dry chicken brests with paper towel.

over medium heat, Melt margarine with oil in a small saucepan; cool slightly.

Mix bread crumbs, basil, parsley, rosemary, salt and pepper in a pie dish.

Brush chicken breasts on both sides with bread crumb mixture and Place chicken on baking sheet.

Bake until chicken is cooked through and breadcrumbs are golden, about 20 minutes.

Transfer to plates.

passing lemon wedges along side Chicken,(Squeese on chicken to taste.

Serve
