Honey Cake

Honey Cake is one of the sweet dishes served during Rosh Hashanah in order to welcome in a "sweet new year."

Ingredients

3/4 cupsSugar
2 Eggs
1 tbsOil
2 cupsFlour
1/2 cupHoney
1/3 cupBrewed Coffee (cold)
1/4 tspGinger
2 tspBaking Powder
1/2 tspBaking Soda
1/2 tspGround Allspice
1 tspCinnamon
1/2 CupShelled Almonds

Instructions

Preheat the oven to 350o F.

In a large mixing bowl, beat the eggs until frothy. Continue mixing as you add the sugar, oil, baking powder, honey, then the rest of the ingredients except for a few tablespoons of the almonds.

Pour the batter into greased 9" x 9" inch pan. Gently sprinkle the reserved almonds on top of the batter.

Bake in a 350o F oven for 45 minutes or until a toothpick stuck in the center of the cake comes out dry.
