Clean Chicken breasts,
Slice 4 breasts lenghwise not all the way through,(as in a fold).
Spread a bit of Mastard on the inside fold of partial-cut breast.
sliced pickles, add thinly cut cold cuts, (or basil), fold the sections closed, will look like a stuffed (Shnitzel).
Dip each stuffed Shnitzel into the Mayonnaise and breadcrumbs, Cover both sides and shake off extra crumbs,
Place breasted shnitzels in a baking dish, not tuching.
bake at 425 until golden brown - 40 minutes.
serve on a plate with a slice of lemon.
Optional-You may serve with Rice and a Green Vegtable.
