Prepare some Olive, granola or sunflower oil in a skillet.
Turn on the processor to the shredder blade.
Put the onions, pilled potatoes and drained beets, through the shredder.
Pour all contents into a large bowl. Add the flour, salt and pepper
mix well.
Heat some olive or canola oil in a non-stick skillet. Using a large spoon or ladle, start frying the "latkes". Spoon portions that will be approximately 2 or 3 inches in diameter and allow to brown nicely on the first side. Flip over and continue to fry on the second side until nice and crispy. Remove from pan onto paper towels to drain off some of the excess oil and serve.
Some like to eat the laTKES WITH sour cream, applesauce, jelly or cream cheese, on the side. ENJOY !
