1. Chicken soup with Matzo-Balls (Kniedlech)

2. Chicken Soup with Flanke

Ingredients

1 Tblsp salt (optional)
1 (11/2 Lb)Piece Flanken
4 Lbs. Chicken
1/4 tsp. ginger (optional)
2 Carrots
1 tsp. Dill chopped or not/ seeds
2-3 sprigs parsley
2 stalks Celery
3 small onions
3 quarts Water
1 Tblsp. papper (optional)

Instructions

In a large pot Put in the chicken parts.

Boil the water for about 20 min and pour out the dirty water out of the pot.

Rinse out the pot and rinse the partly cooked chicken,

**Start again as before**plus...

Put about 3 quarts of water

add the chicken,the vegtables and the seasoning

cook to a boil

skim off the "yak" that might form on top.

let simmer for an hour (chicken should be tender, almost falling of the bone).

***USE SAME INSTRUCTIONS FOR MAKING SOUP AND FLANKE***

using the Flanke meat.

IDEA :

In homes that do not like boiled chicken, you may take out the chicken from soup after 40 min.

put into a baking dish,

rub slightly with salt, pepper, garlic and margarine

bake at 400 degree for 30 min.

Serve with farfel, Matzo kugel or potato pancakes and a vegtables.
